Lightly pan-fried veal with a rich tomato sauce and golden melted cheese – what’s not to like?

  • Veal leg steak, lean, raw, 800 g, trimmed of fat
  • Plain flour, white, 2 tablespoon(s)
  • Olive oil, 2 tablespoon(s)
  • Tomato passata, 700 g
  • Dried oregano, 1 teaspoon(s)
  • Basil, 2 tablespoon(s), chopped, plus extra leaves to serve
  • Mozzarella cheese, reduced fat, 100 g, grated

Method

  1. Preheat the grill to high.
  2. Coat the veal lightly with the flour and season with a little salt and pepper.
  3. Heat the olive oil in a large non-stick frying pan over medium heat. Brown the steaks for about 2 minutes each side (it is fine if they are still pink in the middle). Place in a single layer in a shallow ovenproof dish.
  4. Combine the passata, oregano and basil in a medium saucepan and warm over medium heat or in the microwave. Pour the sauce over the veal, sprinkle with the grated cheese and place under the grill until the cheese has melted.
  5. Sprinkle with the extra basil leaves and serve with a salad or steamed vegetables to the side.
