  • Extra virgin olive oil, garlic infused, 1 tablespoon(s)
  • Turkey mince, 300 g
  • Chipotle paste, 2 teaspoon(s)
  • Dried paprika, 1 teaspoon(s), smoked
  • Tomato paste, no added salt, 1 tablespoon(s)
  • Eggplant, 1 small, chopped
  • Red capsicum, 1 capsicum(s), chopped
  • Tomato, 2 medium, chopped
  • Pepper, any type, ground, 1 pinch(es)
  • Parsley, ¼ cup(s), chopped

Method

Heat oil in a medium frying pan over medium-high heat.

Cook turkey in the pan, stirring constantly to break up lumps, for 8 to 10 minutes or until cooked and golden.

Add all remaining ingredients, except the parsley, and ½ cup water. Cook, stirring occasionally, for 10 minutes or until vegetables are tender and sauce reduces slightly.

Divide mixture among serving bowls. Serve sprinkled with parsley.
