Method
Heat oil in a medium frying pan over medium-high heat.
Cook turkey in the pan, stirring constantly to break up lumps, for 8 to 10 minutes or until cooked and golden.
Add all remaining ingredients, except the parsley, and ½ cup water. Cook, stirring occasionally, for 10 minutes or until vegetables are tender and sauce reduces slightly.
Divide mixture among serving bowls. Serve sprinkled with parsley.
