  • Cannellini beans, canned, drained, ¼ cup(s)
  • Tuna, canned in springwater, 1 x 95g can(s) (drained)
  • Sundried tomato, ¼ cup(s), sliced
  • Lebanese cucumber, ½ cucumber(s), diced
  • Parsley, 0.2 bunch(s), leaves picked
  • Rocket, any type, 1 cup(s)
  • Lemon, ½ lemon(s), juiced
  • Olive oil, 1 teaspoon(s)
  • Pita bread, wholemeal, 1 pita(s)

Method

Combine the cannellini beans, tuna, sundried tomatoes, cucumber, parsley, rocket, lemon juice and oil in a large bowl.

Spoon salad inside pita bread to serve.

TIP: Excess cannellini bean and tuna mixture could be made and kept refrigerated for 1-2 days.
