This recipe for bruschetta is simple to prepare, and with three flavoursome topping options it is bound to appeal to a variety of tastes.

  • White bread, 8 slice(s), crusty bread
  • Garlic, 1 clove(s)
  • Tomato, 6 medium, diced
  • Balsamic vinegar, 1 tablespoon(s)
  • Basil, ½ cup(s)
  • Olive oil, extra virgin, 1 tablespoon(s)
  • Bocconcini, 100 g, sliced

Method

Toast the bread in a toaster, under the grill or on a chargrill. Cut the garlic clove in half, then rub the cut side over the toast while it is still warm.

Combine diced tomatoes, balsamic vinegar, extra virgin olive oil and shredded basil and season with salt and pepper.

Spoon onto the bread and top with bocconcini. Garnish with small basil leaves.
