  • Mayonnaise, reduced-fat, 1½ tablespoon(s)
  • Mixed spice, 1 teaspoon(s), portuguese spice blend
  • Chicken breast, lean, baked, 100 g, shredded
  • Burgen Bread, Soy-Lin, 2 slice(s)
  • Baby rocket, 15 g
  • Tomato, ½ medium slice(s), sliced
  • Beetroot, peeled, boiled, 1 beetroot(s), grated
  • Lebanese cucumber, unpeeled, ½ cucumber(s), thinly sliced
  • Lime, ½ lime(s), to serve, optional

Method

Combine the mayonnaise and spice blend in a bowl. Add chicken and stir to combine.

Top the two slices bread with evenly with rocket, tomato, beetroot, cucumber and chicken. Season and serve with a squeeze fresh lime.

TIP: The Portuguese spice blend is a premixed spice available in the spice section of the supermarket. Its delicious sprinkled over chicken, fish, pork or tofu before cooking or added to your salad dressing.
