Comfort food never tasted so good! Indulge in this healthy pasta dish that tastes just as delicious reheated for lunch the next day.

  • Pasta, uncooked, 250 g, penne
  • Tomato-based pasta sauce, 1 500g jar(s), oregano flavoured if available
  • Mushrooms, 200 g, sliced
  • Black olives, drained, 0.3 cup(s)
  • Tuna, canned in springwater, 1 x 425g can(s) (drained)
  • Olive oil, ½ teaspoon(s)
  • Red capsicum, 1 capsicum(s), diced
  • Onion, any type, ½ medium
  • Shredded cheese, reduced fat, 0.3 cup(s)

Method

Preheat the oven to 200°C.

Cook the pasta according to packet instructions.

Heat the oil in a large non-stick frying pan. Add the mushrooms, capsicum and onion and cook for 2-3 minutes. Stir in the tomato sauce and cook for a further 3-4 minutes to warm through.

Mix in the tuna and olives and transfer all ingredients into a lined baking dish. Sprinkle with cheese and bake for 15 minutes.

Serve with a green side salad.
