What better way to enjoy the company of friends than over a platter of freshly grilled seafood? The dipping sauces enhance the wonderful flavours.

  • Olive oil, 1 tablespoon(s)
  • Lemon juice, 2 tablespoon(s)
  • Garlic, 2 clove(s), crushed
  • Italian parsley, 2 tablespoon(s), chopped
  • Prawns, raw, peeled, any type, 250 g, peeled and deveined
  • Scallops, raw, 8 scallop(s)
  • Black mussels, raw, 300 g, scrubbed and debearded
  • White fish, any type, raw, 150 g, skin and bones removed, cut into strips
  • Oysters, raw, 12 oyster(s)
  • Mayonnaise, reduced-fat, 3 tablespoon(s)
  • Tomato sauce, 1 tablespoon(s)
  • Worcestershire sauce, 1 teaspoon(s)
  • Lemon juice, 2 teaspoon(s)
  • Shallots, peeled, 2 shallot(s), finely chopped
  • Olive oil, extra virgin, 2 tablespoon(s)
  • White wine vinegar, 1 tablespoon(s)
  • Lemon juice, 1 tablespoon(s), or lime
  • Brown sugar, 1 teaspoon(s)

Method

  1. Combine the olive oil, lemon juice, garlic and parsley and brush over the prawns or squid, scallops, clams or mussels and fi sh. Cover and marinate in the refrigerator for 30 minutes.
  2. To make the tomato sauce, combine the mayonnaise, tomato ketchup, Worcestershire sauce and lemon juice in a small bowl, then transfer to a dipping bowl and set aside until ready to serve.
  3. To make the vinaigrette, combine shallots, olive oil, white wine vinegar, lemon or lime juice and brown sugar in a small bowl, then transfer to a dipping bowl and set aside until ready to serve.
  4. Heat a chargrill or barbecue to medium. Add the marinated seafood and grill, turning, for 2–3 minutes or until just cooked. Arrange on a platter with the oysters and serve with the sauce and vinaigrette to the side.
