  • Wholemeal pasta, uncooked, 1 cup(s)
  • Extra virgin olive oil, 2 teaspoon(s)
  • Balsamic vinegar, 2 teaspoon(s)
  • Cucumber, 1 cucumber(s), diced
  • Cherry tomatoes, 1 cup(s) (regular cherry tomatoes), halved
  • Feta cheese, reduced fat, 100 g

Method

Boil pasta according to packet instructions. Rinse under cold water, place into a large bowl and allow to cool.

In a small bowl, whisk oil and balsamic vinegar.

Once the pasta has cooled, add cucumber, tomatoes and feta. Toss to combine.

Divide the pasta salad between two serving bowls and drizzle over the dressing.

TIP: If you have dried oregano in your pantry, add a dash to the dressing before whisking.
