The peanut sauce is only mildly spicy, so the whole family can tuck into this popular dish with confidence. Any leftover satay sticks would make a great lunchbox addition.

  • Chicken breast, lean, raw, 800 g, cut into 1cm thick pieces
  • Soy sauce, 2 tablespoon(s)
  • Lime juice, 2 tablespoon(s)
  • Garlic, 2 clove(s), crushed
  • Olive oil, 1 tablespoon(s), or vegetable oil
  • Curry powder, 2 teaspoon(s)
  • Coriander, 1 handful(s), to serve
  • Oyster sauce, 1 tablespoon(s)
  • Peanut butter (smooth or crunchy), 1 tablespoon(s)
  • Sweet chilli sauce, 2 tablespoon(s)
  • Lime juice, 1 tablespoon(s)
  • Lebanese cucumber, unpeeled, 1 cucumber(s), seeded and cut into thin strips
  • Bean sprouts, 100 g
  • Spring onion, 2 medium onion(s), thinly sliced
  • Red capsicum, 1 capsicum(s), thinly sliced
  • Lime juice, 1 tablespoon(s)
  • Soy sauce, light, 1 teaspoon(s)

Method

  1. Place the chicken, soy sauce, lime juice, garlic, oil and curry powder in a bowl and mix well. Cover and marinate in the refrigerator for at least 1 hour.
  2. To make the peanut sauce, combine oyster sauce, peanut butter, sweet chilli sauce and lime juice in a bowl. If you want to heat the sauce to serve, warm gently in a microwave.
  3. To prepare the salad, toss cucumber, bean sprouts, spring onions, capsicum, lime juice and soy sauce together.
  4. Heat a barbecue or chargrill to medium. Thread the chicken onto skewers and cook for 3–4 minutes each side or until cooked through. Garnish with coriander leaves (if using) and serve with the peanut sauce and cucumber salad.
