  • Extra virgin olive oil, 2 teaspoon(s)
  • Brown onion, ½ medium, finely chopped
  • Garlic, minced or crushed, 1 teaspoon(s)
  • Beef mince, lean, raw, 250 g
  • Tomato paste, no added salt, 1 tablespoon(s)
  • Ground turmeric, ½ teaspoon(s)
  • Diced tomatoes, canned, salt reduced, 1 x 400g can(s)
  • Lentils, canned, no added salt, ⅓ x 400g can(s) (drained)
  • Parsley, 1 handful(s), roughly chopped plus extra for garnish
  • Pepper, any type, ground, 1 pinch(es)
  • Pumpkin, any type, 300 g, peeled, seeded and thinly sliced
  • Zucchini, 1 medium, cut lengthwise into 0.5 cm thickness

Method

Preheat oven to 180°C.

Heat oil in a large heavy-based non-stick frying pan over medium heat. Once hot, add onion and garlic, cook, stirring often, for 3 to 4 minutes, or until onion starts to soften. Add the mince and cook, stirring, for 4 to 5 minutes, or until the mince is browned. Stir in the tomato paste, turmeric and diced tomatoes. Bring to a simmer and cook for 10 minutes, or until the mixture thickens slightly. Stir through the lentils and parsley. Season.

Transfer half the mince mixture to a large baking dish, spreading it evenly over the base. Add half of the pumpkin and zucchini slices, overlapping them to cover the mince. Repeat with the remaining mince, pumpkin and zucchini. Cover the dish tightly with foil and bake for 15 minutes. Remove the foil and bake for another 10 to 15 minutes minutes, or until the pumpkin is very tender.

Allow to stand for 5 to 10 minutes to cool slightly. Sprinkle over chopped parsley.

TIP: If you have Dairy units to spare, scatter some parmesan cheese on top to serve.
