A quick dessert to make if you’re having friends over. Prepare the filling in advance, then roll the strudel and pop it in the oven to cook while you’re eating your main meal.

  • Pears, canned in natural juice, drained, 400 g
  • Walnuts, 40 g, chopped
  • Dried dates, ¼ cup(s), pitted, roughly chopped (3 tablespoons)
  • Ground cinnamon, ½ teaspoon(s), plus extra for serving (optional)
  • Ground nutmeg, ½ teaspoon(s), or ground cloves
  • Ground ginger, ½ teaspoon(s)
  • Honey, 1 tablespoon(s)
  • Filo pastry, uncooked, 6 sheet(s)
  • Oil spray, 1 spray(s) (2-sec spray)
  • Icing sugar, 1 teaspoon(s), for dusting
  • Low-fat yoghurt, vanilla, 600 g

Method

  1. Preheat the oven to 180°C. Line a baking tray with baking paper.
  2. Combine the pears, walnuts, dates, ground spices and honey in a medium-sized bowl.
  3. On a clean work surface, stack the pastry sheets on top of one another, spraying cooking oil between each sheet. Spoon the pear mixture along the short edge, leaving a 5 cm border. Fold in the sides, then roll up tightly to enclose the filling. Place the roll, seam-side down, on the prepared tray.
  4. Spray lightly with cooking oil, then bake for 20–25 minutes until the pastry is golden and crisp. Dust lightly with icing sugar, then cut into slices. Serve warm with yoghurt and sprinkled with extra cinnamon, if liked.
