Preheat a grill to medium heat.
In a small bowl mix together tomato paste, paprika, olive oil and one teaspoon of water to form a paste.
Lightly toast crumpets. Line a baking tray with baking paper and place crumpets in the centre. Spread crumpets with tomato paste and top with onion, cherry tomatoes and cheese. Place under the grill for 3-4 minutes, or until cheese has melted and is bubbling. Allow to cool slightly before eating.
TIP: You can use any vegetables you like to top the pizzas. Sweetcorn, capsicum and olives work well.
