Avocado and feta salsa

Delicious on toast as a quick breakfast. The salsa can also be added to egg whites to make a tasty omelette.

  • Olive oil spray, 1 spray(s)
  • Red onion, 2 small, finely diced
  • Garlic, 2 clove(s), finely sliced
  • Roma tomato, 2 tomato(s), diced
  • Avocado, 1½ medium, cut into 2 cm pieces
  • Dried oregano, 2 tablespoon(s), chopped
  • Feta cheese, reduced fat, 80 g, crumbled
  • Black pepper, ground, 1 pinch(s), freshy ground


Heat a large frying pan over a low heat and spray lightly with oil.

Cook the onions and garlic gently for a few minutes until soft. Add the tomato, avocado and oregano and stir gently until warmed through.

Add the feta and allow to melt slightly. Season and serve warm.
