  • Lamb mince, 750 g
  • Red onion, 1 medium, finely chopped
  • Rosemary, fresh, 1 tablespoon(s), chopped
  • Italian parsley, 1 tablespoon(s), chopped
  • Breadcrumbs, 50 g
  • Eggs, raw, 1 extra large egg(s), lightly beaten
  • Olive oil, 1 tablespoon(s)

Method

In a large bowl, mix all ingredients except olive oil. Season lightly. Form mixture into 8 equal portions, then roll each to form a sausage shape.

Heat oil in a large heavy-based frying pan over medium heat. Add sausages and cook, turning frequently, for 10 minutes, or until all sides are golden and sausages are cooked through. Serve with a salad, greens or pumpkin mash or all three.
