  • English muffin, wholemeal, 1 muffin(s)
  • Tomato paste, no added salt, 2 tablespoon(s), or pizza sauce
  • Basil pesto, 1 tablespoon(s)
  • Mozzarella cheese, reduced fat, 50 g
  • Cherry tomatoes, 5 regular cherry tomato(es), chopped

Method

Preheat the oven to grill. Line a baking tray with baking paper.

Lightly toast the both English muffin halves.

Spread the tomato paste onto each muffin half, followed by the pesto. Top with the tomatoes and sprinkle over the cheese. 

Place under the grill for 3 to 4 minutes, or until the cheese has melted.
